My ultimate buddha bowl recipe is here to make your meal prep easier. The dark, gloomy winter months make everything seem like more work, so I’m always looking for easy solutions. I blame my flagging energy partly on the lack of natural vitamin D, which gives many people the holiday blues. While it can be tempting to hide under the covers, I’m staying enrolled in the 5 am club and remaining focused on my goals even though I’d rather sleep!
Healthy baked falafel
I’ve always adored falafel, but I only indulge in the takeout kind (read: fried) on occasion. I decided to create my own healthy baked falafel recipe as a filling, healthy and delicious alternative. Continue reading “Healthy baked falafel”
Thai quinoa salad
For a delicious meatless Monday option, try my easy and simple Thai quinoa salad that is vegetarian, vegan, gluten free, dairy free and soy free (the same as these donuts, which were my most popular recipe of 2017).
I like to make this salad and then eat it for lunch all week because I don’t mind eating the same healthy thing for days on end (goes well with my natural inclination towards kitchen laziness and hatred of dishes).  Continue reading “Thai quinoa salad”
Hearty chicken and rice soup
It’s so easy to heat up soup from a can, especially if you or someone in your household is under the weather. However, there is nothing like homemade hearty chicken and rice soup (plus there’s a lot less sodium). If you make a big batch and freeze it in portions (meal prep 101), then it’s basically the same thing as reaching for a can. In my recipe down below, I give you my secret to great tasting soup that won’t disappoint! Continue reading “Hearty chicken and rice soup”
Sweet potato scramble
I love breakfast food and we often have breakfast for dinner at our house (check out my recipe for delicious coconut flour banana pancakes to get the full story behind my addiction). As we work to reduce our meat consumption, eggs are a quick, easy and cheap source of protein that works for some vegetarians. If you’re looking for meatless Monday ideas, try my sweet potato scramble recipe for breakfast or dinner!  Continue reading “Sweet potato scramble”
Turkey meatballs over spaghetti squash
One of our easy weeknight dinner staples is turkey meatballs over spaghetti squash. Buster is a vegetable monster and as soon as he knows I’m making spaghetti squash, he won’t leave the kitchen. He always gets the leftovers with his dinner, which makes him the happiest boy on earth. He’s very well behaved, so we had to coax him to “steal” the spaghetti squash from the plate in the picture below. Oh, the things we do for social media #dogcorruption
Healthy Taco Tuesday recipe
Tacos are one of the world’s greatest inventions, so imagine you had a healthy Taco Tuesday recipe that allowed you to partake guilt free! On my journey to become healthier and fitter (check out the recipes from my kitchen and workouts from my living room), creating healthy alternatives for my old favourites was one of the keys to my success. I couldn’t live without donuts, cookies (and more cookies), or pizza and I don’t have to!
Healthy slow cooker cabbage rolls
Cabbage rolls are a new favurite in my household because I love that you have a complete meal all wrapped up in leafy green goodness. My husband is Ukrainian and it’s a bit sacrilege that I’ve only recently learned to make healthy slow cooker cabbage rolls that you can set and forget (my favorite way to cook)! Better late than never, right?
Before you check out the recipe, head over to Instagram to see what I have in store for you next week! I’ve been slammed with conference prep the last two weeks, but I’ll be back in business next week with brand new content. Continue reading “Healthy slow cooker cabbage rolls”
Easy, moist, grillable black bean burgers
Most black bean burgers are infused with Mexican flavours. While I love Mexican food, I wanted to try a different flavour combination for my first attempt at easy, moist, grillable black bean burgers and I couldn’t be happier with the results. How to make perfect fall off the bone ribs
I’ve shared many healthy and lightened up recipes with you on the blog, but if you want to make perfect fall off the bone ribs every single time, unfortunately they don’t fall into the “healthy” category because of what I cook them in. However, I have made some healthy adjustments to ensure that indulging in savory and delicious ribs won’t derail your diet. Continue reading “How to make perfect fall off the bone ribs”
