Healthy Strawberry Jam

Healthy strawberry jam

To celebrate the release of my steamy new adult contemporary romance novel, Sweet Redemption, I created the Sweet Treat series and I’m so excited to share my healthy strawberry jam recipe. I absolutely adore jam and I have fond memories of strawberry picking with my dad and going home to make mason jar (after mason jar) of jam.

In the spirit of nostalgia, let’s learn how to make healthy strawberry jam, shall we? There’s no need for all the sugar and we might as well add some superfoods and protein while we’re at it. If you missed the first recipe in the series, check out my birthday cake protein balls that have been getting rave reviews.

Birthday Cake Protein Balls

Birthday cake protein balls

It’s no secret that I have a sweet tooth. One of my favourite splurges is birthday cake timbits (donut holes for my American friends), but they are packed with sugar. I decided to make a healthier version and thus birthday cake protein balls were born. This recipe is the first in my Sweet Treat series to celebrate the release of my debut adult contemporary romance, Sweet Redemption. See what I did there? Sweet.

Baked Falafel

Healthy baked falafel

I’ve always adored falafel, but I only indulge in the takeout kind (read: fried) on occasion. I decided to create my own healthy baked falafel recipe as a filling, healthy and delicious alternative. Continue reading “Healthy baked falafel” →

Lightened Up Banana Bread

Healthy banana bread

All my friends in real life know that banana bread has always been my nemesis. Every time I make it regardless of the recipe I follow, it’s a total disaster. I finally decided to create my own healthy banana bread recipe that is simple and completely foolproof. It doesn’t call for oil, sugar or butter and still tastes amazing. Healthy Smoothie Bowl

Chocolate peanut butter banana smoothie bowl

I love peanut butter (check out my recipes for protein cookies, pancakes, oatmeal protein balls, chocolate chip protein balls, and even dog treats for proof). I also love bananas (check out my easy 2 ingredient cookies and healthy bakery style donuts for further evidence). I’m combining my love affairs in a chocolate peanut butter banana smoothie bowl that is part of my healthy January detox. Chocolate as part of a detox? Yes, please. Deprivation doesn’t work, friends, and dark chocolate is good for you!   Continue reading “Chocolate peanut butter banana smoothie bowl” →

Sweet potato scramble

I love breakfast food and we often have breakfast for dinner at our house (check out my recipe for delicious coconut flour banana pancakes to get the full story behind my addiction). As we work to reduce our meat consumption, eggs are a quick, easy and cheap source of protein that works for some vegetarians. If you’re looking for meatless Monday ideas, try my sweet potato scramble recipe for breakfast or dinner!   Continue reading “Sweet potato scramble” →

Easy Breakfast Recipes

Healthy breakfast quiche

Breakfast is my favorite meal of the day and I shared why in my gluten free coconut flour banana pancake recipe – it stems from nostalgic memories with my dad, who I spent a lot of time with in the kitchen baking up a storm and creating new recipes. We’ve been consistently meal planning this week and healthy breakfast quiche has been getting us from early morning to lunch with ease.     Continue reading “Healthy breakfast quiche” →

The best turkey meatball recipe

Turkey meatballs over spaghetti squash

One of our easy weeknight dinner staples is turkey meatballs over spaghetti squash. Buster is a vegetable monster and as soon as he knows I’m making spaghetti squash, he won’t leave the kitchen. He always gets the leftovers with his dinner, which makes him the happiest boy on earth. He’s very well behaved, so we had to coax him to “steal” the spaghetti squash from the plate in the picture below. Oh, the things we do for social media #dogcorruption

On my journey to become healthier and fitter (check out the recipes from my kitchen and workouts from my living room), creating healthy alternatives for my old favourites was one of the keys to my success. Grillable Black Bean Burgers

Easy, moist, grillable black bean burgers

Most black bean burgers are infused with Mexican flavours. While I love Mexican food, I wanted to try a different flavour combination for my first attempt at easy, moist, grillable black bean burgers and I couldn’t be happier with the results.
