I blame my flagging energy partly on the lack of natural vitamin D, which gives many people the holiday blues. Thai quinoa salad
For a delicious meatless Monday option, try my easy and simple Thai quinoa salad that is vegetarian, vegan, gluten free, dairy free and soy free (the same as these donuts, which were my most popular recipe of 2017).

Turkey meatballs over spaghetti squash
One of our easy weeknight dinner staples is turkey meatballs over spaghetti squash. Buster is a vegetable monster and as soon as he knows I’m making spaghetti squash, he won’t leave the kitchen. He always gets the leftovers with his dinner, which makes him the happiest boy on earth. Lightened up cheeseburger casserole
We don’t eat a lot of red meat in our household, but one of our favourite, easy dishes is my lightened up cheeseburger casserole. We just spent 10 days at the cottage and one of our favourite rituals is ending the day together on the boat watching the sunset (check out our view here and here with lots of bonus pictures and stories on Instagram). Banana cookies with only 2 ingredients
Trying to lose weight is not fun. Imagine you could eat a delicious banana cookie and stay on track! Depriving myself of everything I love doesn’t work for the long term and can lead to a binge of all things brownie. In the maintenance phase, the 80/20 rule works well (80 percent healthy food for fuel and 20 percent food for comfort) and in the losing weight phase, I raise that number to 90/10 or even 95/5 (sorry).
